  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries
  • 2 medium apples (such as Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash sweet potatoes, poke holes in them with a fork, wrap in aluminum foil, and bake on a baking sheet for 45-60 minutes until tender.
  3. Allow sweet potatoes to cool slightly, then cut in half lengthwise and scoop out most of the flesh into a mixing bowl.
  4. Combine the scooped flesh with cranberries, chopped apples, brown sugar, cinnamon, butter, and salt; mix until creamy.
  5. Spoon the filling back into each potato half and return them to the baking sheet.
  6. Bake again at 350°F (175°C) for an additional 15-20 minutes until heated through.
