- 4 medium-sized sweet potatoes
- 1 cup fresh cranberries

- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 400°F (200°C).
- Wash sweet potatoes, poke holes in them with a fork, wrap in aluminum foil, and bake on a baking sheet for 45-60 minutes until tender.
- Allow sweet potatoes to cool slightly, then cut in half lengthwise and scoop out most of the flesh into a mixing bowl.
- Combine the scooped flesh with cranberries, chopped apples, brown sugar, cinnamon, butter, and salt; mix until creamy.
- Spoon the filling back into each potato half and return them to the baking sheet.
- Bake again at 350°F (175°C) for an additional 15-20 minutes until heated through.
