  • 13/4 cups cherry tomatoes (quartered, 1 (10-ounce) container)
  • 1 cup diced bell peppers (I use 1/2 red and 1/2 green pepper)
  • 1/3 cup diced red onion
  • 2 tablespoons finely diced jalapeño
  • 1/3 cup finely chopped cilantro (measured after chopping; 1 bunch)
  • 1 (15.25-ounce) can black beans (drained and rinsed)
  • 1 (15.5-ounce) can black-eyed peas (drained and rinsed)
  • 2 ripe avocados (1 cup, optional)
  • 2 tablespoons red wine vinegar
  • 1 large lime
  • 1 teaspoon chili powder
  • 1 teaspoon sugar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Dijon-style mustard
  • 1/4 teaspoon garlic powder
  • 1/3 cup olive oil
  • Salt and pepper
  • Tortilla chips

Instructions

  1. Prepare your vegetables: Dice sweet corn (fresh or sautéed), cherry tomatoes, bell peppers, jalapeño, and cilantro.
  2. In a large bowl, combine the prepared vegetables with drained black beans and black-eyed peas.
  3. For the dressing: Shake lime juice, zest, red wine vinegar, chili powder, sugar, cumin, paprika, Dijon mustard, garlic powder, olive oil, salt, and pepper in a mason jar until combined.
  4. Right before serving, gently stir in diced avocados and drizzle with dressing.
