  • 100 grams granulated sugar
  • 100 grams almond flour
  • 100 grams powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup butter (for filling)
  • 1/3 cup peanut butter (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 1/4 teaspoon salt (for filling)

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a double boiler, combine egg whites and granulated sugar, whisking until frothy.
  3. Whip the egg mixture to stiff peaks using a stand mixer.
  4. Sift together almond flour, cocoa powder, and powdered sugar; fold into the meringue gently.
  5. Pipe small circles onto the baking sheets and let rest for about 30 minutes.
  6. Bake for 13 minutes, rotating halfway through.
  7. Prepare the peanut butter filling by beating together butter and peanut butter, then adding powdered sugar, vanilla extract, and salt until smooth.
  8. Once cooled, pipe the filling onto one macaron shell and sandwich with another.
