- 1 red bell pepper, diced
- 1 ripe avocado, cubed
- 1/3 cup crumbled cotija or queso fresco
- 1/2 cup chopped fresh cilantro
Instructions
- Season chicken with olive oil and taco seasoning. Cook in a skillet over medium heat for about 10 minutes until juices run clear. Let cool.
