- 2 tablespoons oil (avocado or vegetable)
- 1 pound chicken breast (bite-sized pieces)
- 2 garlic cloves (minced)
- 1 yellow onion (sliced)
- 2 cups shredded cabbage
- 2 carrots (matchstick cut)
- 5 mushrooms (sliced)
- 2 green onions (sliced)
- ¼ cup dark soy sauce
- ¼ cup oyster sauce
- 2 tablespoons honey
- 2 tablespoons mirin
- ½ teaspoon red chili flakes
- ¼ teaspoon black pepper
Instructions
- In a small bowl, mix dark soy sauce, oyster sauce, honey, mirin, red chili flakes, and black pepper. Set aside.
- Heat oil in a large pan over medium-high heat. Sauté onion and garlic until fragrant, then add chicken and cook until browned.
- Add cabbage, carrots, and mushrooms to the pan; sauté until tender.
- Cook udon noodles separately according to package instructions; drain and set aside.
- Combine udon noodles with the chicken mixture and pour in the prepared sauce. Toss until evenly coated.
- Garnish with sliced green onions before serving hot.
