- 3 pounds bone-in chicken pieces
- 1 pound cremini mushrooms
- ½ cup cognac or brandy
- 2 Roma tomatoes, diced
- 1½ cups chicken stock
- Fresh tarragon and parsley
- 3 Russet potatoes
- 2 teaspoons kosher salt
- ½ teaspoon black pepper
- 4 tablespoons butter, divided
- 4 tablespoons olive oil
- ¼ cup shallots, diced
- 1½ tablespoons garlic, minced
- ½ cup white wine
- 3 tablespoons tomato paste
- ½ cup beef stock
- ¼ cup sour cream
Instructions
- 1. Season the chicken with kosher salt and black pepper.
- 2. In a heavy skillet or Dutch oven, heat butter and olive oil over medium-high heat. Cook the chicken until golden brown on both sides; remove and keep warm.
- 3. Sauté mushrooms in the same pan before adding shallots and garlic.
- 4. Deglaze with cognac, then add white wine, tomatoes, tomato paste, chicken stock, beef stock, and sour cream. Simmer until thickened.
- 5. Stir in fresh herbs and return the chicken to the pan to coat in sauce before serving hot.
