Ingredients

Scale
  • 8 ounces tortellini
  • 1 pound ribeye steak, thinly sliced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ cup beef broth
  • ½ cup heavy cream
  • 1 cup provolone cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. Cook tortellini in boiling salted water according to package instructions (about 3-5 minutes). Drain and set aside.
  2. In a large skillet over medium-high heat, heat olive oil and sauté ribeye steak for 3-4 minutes until browned. Remove from skillet.
  3. Add onions and bell peppers to the skillet; cook for about 5-6 minutes until softened. Stir in garlic and cook for another minute.
  4. Season vegetables with salt and pepper; pour in beef broth and simmer for about 2-3 minutes.
  5. Lower heat and stir in heavy cream; let the sauce thicken for an additional 2-3 minutes.
  6. Add provolone and Parmesan cheese while stirring until melted into a smooth sauce.
  7. Return steak to the skillet; mix well with the sauce. Gently toss in drained tortellini until coated.
