  • 6 ounces cream cheese (softened)
  • 2 cups powdered sugar

Instructions

  1. In a stand mixer bowl, combine warm milk and sprinkle yeast on top. Add eggs, melted butter, salt, cinnamon, and sugar; mix well.
  2. Incorporate carrots and coconut, then add four cups of flour. Mix until barely combined and let rest for five minutes.
  3. Switch to a dough hook; knead while adding more flour as needed until the dough is smooth and elastic (about five to seven minutes).
  4. Transfer dough to a greased bowl, cover it, and let rise in a warm place until nearly doubled in size (about thirty minutes).
  5. Prepare the filling by mixing softened butter with brown sugar and cinnamon.
  6. Roll out the dough into a rectangle, spread the filling evenly, roll tightly from one edge, and cut into slices.
  7. Place rolls in a greased baking pan and let rise again while preheating the oven to 350°F.
  8. Pour warmed heavy cream over risen rolls before baking for twenty-seven to thirty minutes until golden brown.
  9. For the frosting, blend softened cream cheese with butter; gradually add vanilla and powdered sugar until smooth.
