  • 2/3 cup granulated sugar
  • 1 1/2 teaspoon all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 2/3 cup granulated sugar
  • 1/3 cup packed light-brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/3 cups finely grated carrots
  • 2 oz cream cheese, softened
  • 1 tablespoon butter, softened
  • 1 1/4 cups powdered sugar
  • 1/4 cup + 2 tablespoon sour cream
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. For the cheesecake filling, beat softened cream cheese with granulated sugar until smooth. Add flour, eggs, vanilla extract, and sour cream; mix well and set aside.
  3. For the carrot cake base, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, combine oil, applesauce, sugars, eggs, and vanilla extract; mix until blended. Gradually add dry ingredients and fold in grated carrots.
  4. Pour half of the carrot cake batter into the prepared pan followed by the cheesecake filling; top with remaining carrot cake batter.
  5. Bake for about 60 minutes or until set. Let cool completely before removing from the springform pan.
