  • 1 teaspoon ground cumin
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 1 large tomato, chopped
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Sauté chopped onion until softened (about 5 minutes).
  3. Add minced garlic and grated ginger; cook until fragrant (2 minutes).
  4. Stir in turmeric, cumin, and other spices; cook for 1 minute.
  5. Slice plantains into rounds and add them to the skillet.
  6. Pour in coconut milk and vegetable broth; stir gently.
  7. Mix in chopped tomato, adjust seasoning with salt and pepper.
  8. Simmer for 15–20 minutes until plantains are tender.
  9. Finish with cilantro and lime juice before serving.
