Ingredients
- 2 tbsp olive oil
- 1 tbsp salted butter
- 4 cups diced yellow onions
- 1/4 cup water
- 2 tbsp fresh thyme (chopped)
- 2 1/2 cups all-purpose flour
- 1 1/4 cup lukewarm water
- 1/4 cup parmesan cheese (finely shredded)
- 2 tbsp granulated sugar
- 2 tsp instant yeast
- 3/4 tsp salt
- 3 whole garlic cloves (crushed)
Instructions
- Caramelize the onions: In a skillet, melt butter and olive oil over medium heat. Add onions and water; cover for about 5 minutes until softened. Uncover, reduce heat to medium-low, and cook for about an hour until caramelized. Stir in fresh thyme.
- Prepare the dough: In a large mixing bowl, combine flour, lukewarm water, parmesan cheese, olive oil, sugar, yeast, and salt. Mix until fully combined.
- Let it rise: Oil your hands and another bowl, place dough inside and cover with plastic wrap. Let it rise in a warm area for about an hour until doubled in size.
- Make garlic oil: Heat olive oil in a skillet; add crushed garlic and cook until fragrant (about 5 minutes). Remove garlic from oil.
- Preheat oven to 425°F (220°C) and pour half of the garlic oil into an unlined baking pan.
- Stretch the dough: After rising, stretch sections of dough into the oiled baking pan seam-side down. Cover again with plastic wrap and let rise for another hour.
- Bake: Check if the dough has large bubbles; pour remaining garlic oil over top and create dimples with your fingers. Bake for about 12-18 minutes until golden brown.
- Cool & Serve: Spoon caramelized onions on top once out of the oven; cool on a wire rack before slicing.
