  • 1 cup + 2 Tbsp. all-purpose flour
  • 1/2 Tbsp. apple pie spice
  • ½ tsp. baking soda
  • Pinch of salt
  • 3 Tbsp. butter
  • 2.5 lbs gala apples (peeled, cored, and diced)
  • 1 cup brown sugar
  • 2 tsp. vanilla extract
  • 1/2 Tbsp. apple pie spice
  • 1/3 cup flour
  • 1/2 cup brown sugar
  • 1/4 cup white granulated sugar
  • 1 tsp. apple pie spice
  • 3/4 cup flour
  • 4½ Tbsp. unsalted butter (melted)
  • 67 oz Dulce de leche (divided in two)

Instructions

  1. Prepare the apple filling by cooking peeled and diced gala apples with butter and spices until soft.
  2. Make the sugar cookie crust by mixing softened butter and sugars until fluffy. Beat in the egg and vanilla before adding dry ingredients.
  3. Press the cookie dough into a greased pie dish and pre-bake for 10 minutes.
  4. Assemble by layering dulce de leche over the crust followed by the apple filling.
  5. Prepare streusel topping and sprinkle it over the pie before baking at 350°F for 25-30 minutes.
  6. Drizzle additional dulce de leche on top after baking and let it rest before serving.
