  • 12 ounces pasta (rotini, penne, or bowtie)
  • 1 ½ cups cherry tomatoes (halved)
  • 8 ounces fresh mozzarella (diced or mozzarella balls)
  • ½ cup fresh basil (chopped or torn)
  • 2 tablespoons extra virgin olive oil
  • ½ cup balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (follow package instructions). Drain and rinse under cold water.
  2. While the pasta cooks, halve the cherry tomatoes and chop the basil. If using block mozzarella, dice it.
  3. In a small bowl, whisk together balsamic vinegar and honey; slowly drizzle in olive oil while whisking until combined.
  4. In a mixing bowl, combine cooked pasta, tomatoes, mozzarella, and basil. Pour dressing over salad and toss gently to coat. Season with salt and pepper.
