This delightful dish features tender imitation crab, tangy sushi rice, and vibrant fresh vegetables, making it the perfect choice for a quick weeknight dinner or meal prep.


Ingredients

  • 1 1/2 cups Calrose sushi rice
  • 2 cups water
  • 1/4 cup seasoned rice vinegar
  • 8 oz imitation crab meat
  • 1 large avocado
  • 1/2 cup diced English cucumber
  • 1/4 cup Japanese mayonnaise
  • 2 teaspoons sriracha
  • Nori sheets and sesame seeds for garnish

Instructions

  1. Rinse sushi rice thoroughly in a mesh sifter, then cook with water in a rice cooker.
  2. Once cooked, transfer rice to a rimmed baking sheet and mix with seasoned rice vinegar; let cool.
  3. In a bowl, blend Japanese mayonnaise with sriracha for spicy mayo.
  4. Chop imitation crab, cucumber, and nori into small pieces.
  5. Assemble bowls with cooled sushi rice, topped with crab, cucumber, avocado slices, spicy mayo, and garnishes.
