  • 12 oz Smoked Sausage (Andouille or Kielbasa)
  • 1 cup Long-Grain White Rice
  • 1 Red Bell Pepper (diced)
  • 1 Green Bell Pepper (diced)
  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 1 ½ cups Chicken Broth
  • 2 tbsp Cajun Seasoning
  • 1 tbsp Olive Oil
  • Salt and Pepper (to taste)

Instructions

  1. Slice smoked sausage into rounds. Dice both bell peppers and onion, then mince garlic.
  2. In a large skillet over medium heat, add olive oil. Sauté onion, bell peppers, and garlic until softened (about 5 minutes).
  3. Stir in the sliced sausage and cook for an additional 3–4 minutes until lightly browned.
  4. Add rinsed rice, chicken broth, and Cajun seasoning; mix well.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes until rice is tender and most liquid is absorbed.
  6. Fluff rice with a fork, season with salt and pepper as desired, garnish if you like, and serve hot.
