  • 500g Pork Mince (or chicken/turkey)
  • 2 tbsp Fish Sauce
  • 200g Vermicelli Noodles
  • Fresh vegetables (e.g., lettuce, carrots, radish)
  • For Nuoc Cham: 4 tbsp Fish Sauce
  • 3 tbsp Rice Wine Vinegar
  • 2 tbsp Lime Juice

Instructions

  1. In a mixing bowl, combine pork mince with fish sauce, white sugar, chopped green onions, minced garlic, white pepper, salt, and lemongrass (if using). Mix well.
  2. Form the mixture into golf ball-sized meatballs.
  3. Heat oil in a frying pan over medium heat and cook meatballs until browned and cooked through (8–10 minutes).
  4. Boil water in a separate pot and soak vermicelli noodles according to package instructions until tender.
  5. To make Nuoc Cham sauce, combine sugar, fish sauce, rice wine vinegar, lime juice, water, chopped chilis (to taste), and minced garlic in a bowl; stir until sugar dissolves.
  6. Serve meatballs over noodles with fresh vegetables and drizzle with sauce.
