  • 16oz brown rice noodles (or pasta of choice)
  • 15oz can of chickpeas
  • 1 cup buffalo sauce
  • 1 cup celery, diced
  • 1 pint cherry tomatoes, sliced
  • 1 cup carrots, diced
  • 1 cup shredded mozzarella cheese
  • 1 cup ranch dressing
  • ½ cup green onion, chopped

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Cook the pasta according to package instructions; drain and rinse with cold water.
  3. Rinse and dry the chickpeas, then toss with 2 tablespoons of buffalo sauce on the baking sheet.
  4. Bake chickpeas for about 30 minutes until crispy; let cool.
  5. In the pot with noodles, combine diced celery, tomatoes, carrots, and mozzarella.
  6. Add ranch dressing and remaining buffalo sauce; mix well.
  7. Fold in cooled chickpeas or sprinkle on top with green onions for garnish.
  8. Serve immediately or chill in the fridge for later enjoyment.
