- 6 Roma tomatoes (1 1/2 lbs, diced)
- 1/3 cup basil leaves (chopped)
- 5 garlic cloves (divided)
- 1 Tbsp balsamic vinegar
- 2 Tbsp extra virgin olive oil
- Sea salt and black pepper to taste
- 1 baguette
- 3 Tbsp extra virgin olive oil for toasting
- 1/3 cup shredded parmesan cheese
Instructions
- Dice the Roma tomatoes and combine them in a mixing bowl with chopped basil, minced garlic (reserve one clove), balsamic vinegar, olive oil, sea salt, and black pepper.
- Preheat your oven to 400°F (200°C). Slice the baguette into 24 pieces, brushing each side with olive oil and sprinkling with parmesan.
- Toast the baguette slices on a baking sheet for about 7 minutes until golden brown.
- Once toasted, rub each piece with the reserved garlic clove and top generously with the tomato mixture.
