  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons unsalted butter (melted and cooled)
  • 2 1/2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a stand mixer, cream together room temperature butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla; mix until well combined.
  3. In a separate bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt. Gradually add to the wet mixture until combined. Chill dough for 1 hour.
  4. Prepare the filling by mixing softened butter, brown sugar, cinnamon, and cake flour until smooth.
  5. Roll chilled dough into balls, create a well in one half for the filling, seal with another half, and gently roll to shape.
  6. Bake cookies for 11–13 minutes until lightly golden. Cool before icing with a mixture of powdered sugar, melted butter, milk, and cinnamon.
