Instructions
- In a large Dutch oven, heat olive oil and butter over medium-high heat until melted. Add finely chopped onion, carrots, and celery; sauté until softened (about 5–8 minutes). Stir in garlic and season with salt and pepper. Remove from pot.
- Cook pancetta until golden brown; remove and set aside.
- Brown the ground meat in batches, seasoning with salt and pepper.
- Return soffritto and pancetta to the pot; deglaze with white wine, scraping up browning bits.
- Stir in crushed tomatoes, milk, nutmeg, salt, and pepper; bring to a boil then reduce to simmer.
- Cover and cook for 3–4 hours until thickened. Stir in heavy cream (if using), Parmesan cheese, and parsley before serving.
