Description

Blueberry Swirl Yogurt Bites are a delectable frozen treat that combines the creamy goodness of Greek yogurt with a vibrant blueberry compote. Perfect for hot summer days or as a healthy dessert option, these yogurt bites are not only refreshing but also incredibly easy to make.


Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract

Instructions

  1. In a small saucepan, combine blueberries, honey, and lemon juice. Cook over medium heat for about 5 minutes until softened.
  2. If desired, dissolve cornstarch in water and stir into the blueberry mixture to thicken. Remove from heat and let cool completely.
  3. In a mixing bowl, combine Greek yogurt and vanilla extract until smooth. Adjust sweetness with more honey if needed.
  4. Spoon the yogurt mixture into silicone molds or mini muffin tins, filling each about three-quarters full.
  5. Top each portion with cooled blueberry compote and swirl gently with a toothpick.
  6. Freeze for at least 3 hours until solid.
