- 1 cup Greek yogurt
- 1/2 cup blueberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
Instructions
- In a small saucepan, combine blueberries, honey, and lemon juice. Cook over medium heat for about 5 minutes until softened.
- If desired, dissolve cornstarch in water and stir into the blueberry mixture to thicken. Remove from heat and let cool completely.
- In a mixing bowl, combine Greek yogurt and vanilla extract until smooth. Adjust sweetness with more honey if needed.
- Spoon the yogurt mixture into silicone molds or mini muffin tins, filling each about three-quarters full.
- Top each portion with cooled blueberry compote and swirl gently with a toothpick.
- Freeze for at least 3 hours until solid.
