  • 2 cups fresh blueberries
  • 2 1/2 cups peeled and sliced peaches (56 peaches)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 3/4 cup granulated sugar (divided)
  • 3/4 cup all-purpose flour (divided)
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 6 tablespoons cold butter (diced)
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a large bowl, mix together the blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, and half of the granulated sugar and flour. Toss gently until well combined.
  3. In another bowl, combine the remaining flour, oats, brown sugar, remaining granulated sugar, salt, and cinnamon. Mix well before adding the cold butter; use your fingers to blend until large crumbles form.
  4. Spread the fruit mixture into a baking dish or cast iron skillet and evenly top with the crumble mixture.
  5. Bake for about 40 to 45 minutes until golden brown and bubbly. Let it cool slightly before serving.
