Ingredients
- 250 g digestive or graham crackers
- 75 g butter
- 800 g cream cheese
- 260 g granulated sugar
- 300 g fresh blueberries
- 4 large eggs
- 2 tbsp granulated sugar
- 110 g all-purpose flour
- 200 g sour cream (18% room temperature)
- 1 1/2 tbsp cornstarch
- 2 1/2 tsp vanilla extract
- 1 tbsp all-purpose flour
- 2 tsp lemon juice
Instructions
- Preheat oven to 175°C (350°F). Crush the crackers and mix with melted butter and sugar. Press into a springform pan.
- Combine blueberries with sugar, flour, and lemon juice; set aside.
- Beat cream cheese until smooth, add sugar, sour cream, cornstarch, vanilla, and eggs; mix until just combined.
