  • 1 lb mafaldine (or fettuccini/linguini) noodles
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning (plus additional for garnish)
  • Salt and pepper to taste

Instructions

  1. Pound chicken breasts to an even thickness and rub with olive oil and blackened seasoning.
  2. Heat a skillet over medium-high heat with olive oil. Cook chicken for 3-4 minutes per side until blackened. Add butter and garlic in the last few minutes.
  3. In the same skillet, melt remaining butter, sauté garlic, add heavy cream and additional seasoning; simmer until thickened.
  4. Cook pasta according to package instructions; reserve some pasta water before draining.
  5. Combine cooked noodles with alfredo sauce, adding reserved pasta water for desired thickness. Top with sliced chicken and additional seasoning.
