  • 1 pound boneless skinless chicken thighs or breasts
  • 3 tablespoons vegetable oil
  • 34 cloves garlic, minced
  • 1 inch piece fresh ginger, minced
  • 1/2 large white onion, cut into strips
  • 2 medium bell peppers, cut into strips
  • 1 tablespoon cornstarch
  • 1 tablespoon light soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons oyster sauce
  • 2 tablespoons light soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Cut chicken into strips and pat dry. Marinate with cornstarch, soy sauce, Shaoxing wine, and black pepper for 10–15 minutes.
  2. In a separate bowl, whisk together chicken broth, oyster sauce, soy sauce, cornstarch, and black pepper to make the sauce.
  3. Heat 2 tablespoons of oil in a skillet over medium-high heat. Cook marinated chicken until browned; set aside.
  4. Stir-fry garlic and ginger in remaining oil until fragrant. Add onions and bell peppers; cook until crisp-tender.
  5. Pour the sauce over vegetables and simmer until thickened. Return chicken to skillet and mix well.
  6. Serve hot over rice or noodles.
