  • 1 pound skinless salmon
  • ½ medium onion
  • ¼ cup + 2 tablespoons whole wheat panko breadcrumbs
  • 3 tablespoons minced cilantro
  • 1 egg white
  • ¾ California avocado
  • 3 tablespoons fat-free plain Greek yogurt
  • Juice of ½ lime

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a food processor, combine salmon, grated onion, panko breadcrumbs, cilantro, egg white, minced garlic, salt, pepper, paprika, and oregano. Pulse until just combined.
  3. Shape the mixture into meatballs about 1.5 inches in diameter and place on a parchment-lined baking sheet.
  4. Bake for about 18 minutes or until golden brown.
  5. For the sauce, blend avocado, Greek yogurt, minced garlic, lime juice, water, cilantro, chipotle chili powder, salt, and pepper until smooth.
  6. Serve warm meatballs topped with avocado sauce.
