Ingredients

  • 220g butter
  • 220g caster sugar
  • 4 medium eggs
  • 50g ground almonds
  • 170g self-raising flour
  • 1 tsp baking powder
  • 8 halved apricots

Instructions

  1. Preheat the oven to 180℃ (350℉) and grease a stoneware dish.
  2. Cream together butter and caster sugar until light and fluffy.
  3. Gradually add eggs, mixing well after each addition.
  4. Fold in self-raising flour, ground almonds, baking powder, and vanilla extract until just combined.
  5. Pour batter into the prepared dish, smoothing evenly.
  6. Press halved apricots into the batter, cut side up, and sprinkle with extra sugar.
  7. Bake for 35-40 minutes until golden brown; check with a skewer to ensure it's cooked through.
  8. Allow to cool before serving dusted with icing sugar.
