- 250g gala apples
- 50g dark brown sugar
- 1 1/2 teaspoons ground cinnamon
- pinch of salt
- juice from one small lemon
- 184g unsalted butter
- 100g dark brown sugar
- 100g granulated sugar
- 2 teaspoons vanilla bean paste or extract
- 1 egg
- 1 egg yolk
- 250g all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon fine sea salt
- 5g cornstarch
- 66g granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- Prepare the apples by peeling and dicing them, then toss with dark brown sugar, cinnamon, salt, and lemon juice. Cook on low-medium heat until caramelized (about 10 minutes) and chill.
- Brown the butter over medium heat until golden brown, then cool.
- In one bowl, mix flour with baking soda, cream of tartar, cinnamon, salt, and cornstarch. In another bowl, combine cooled brown butter with sugars and vanilla; mix in eggs and caramelized apples.
- Gradually add dry ingredients to wet; chill dough for 2–3 hours.
- Preheat oven to 350°F (175°C). Scoop portions of dough, roll in cinnamon-sugar mixture, and bake for 12–14 minutes.
