  • 50g dark brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • pinch of salt
  • juice from one small lemon
  • 184g unsalted butter
  • 100g dark brown sugar
  • 100g granulated sugar
  • 2 teaspoons vanilla bean paste or extract
  • 1 egg
  • 1 egg yolk
  • 250g all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 5g cornstarch
  • 66g granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Prepare the apples by peeling and dicing them, then toss with dark brown sugar, cinnamon, salt, and lemon juice. Cook on low-medium heat until caramelized (about 10 minutes) and chill.
  2. Brown the butter over medium heat until golden brown, then cool.
  3. In one bowl, mix flour with baking soda, cream of tartar, cinnamon, salt, and cornstarch. In another bowl, combine cooled brown butter with sugars and vanilla; mix in eggs and caramelized apples.
  4. Gradually add dry ingredients to wet; chill dough for 2–3 hours.
  5. Preheat oven to 350°F (175°C). Scoop portions of dough, roll in cinnamon-sugar mixture, and bake for 12–14 minutes.
