- 2 medium apples
- 30 g Light brown soft sugar
- 1/2 tsp Cinnamon
- 1/4 tsp Mixed spice
- 1 tsp Cornflour (cornstarch)
- 10 g Butter (unsalted)
- 8 g Light brown soft sugar
- 17 g Plain flour
- 1/8 tsp Cinnamon
- 175 g unsalted butter
- 175 g light brown soft sugar
- 3 large eggs
- 175 g self-raising flour
- 1/2 tsp Cinnamon
- 1/4 tsp Mixed spice
- 175 g Butter (softened, unsalted)
- 350 g Icing sugar
- 1 1/2 tsp Cinnamon
- 2–3 tbsp Milk
Instructions
- Prepare the apple filling by peeling and chopping apples, then cooking them with sugar and spices until soft.
- Make the crumble topping by mixing flour, sugar, and cinnamon with butter until crumbly; bake until golden.
- For cupcakes, cream butter and sugar, add eggs one at a time, then fold in flour and spices. Bake until golden.
- Once cooled, fill cupcakes with apple filling, frost with cinnamon buttercream, and top with crumble.
