  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350F (180C). Prepare a 9-inch springform pan by wrapping it in tin foil and greasing it.
  2. Combine graham cracker crumbs, brown sugar, cinnamon, and melted butter for the crust; press into the bottom of the pan.
  3. Peel and slice apples, then mix with brown sugar and cinnamon for the filling.
  4. Beat room temperature cream cheese with sugars until smooth. Add eggs one at a time, followed by sour cream and cornstarch.
  5. Layer apple mixture over crust, then pour cheesecake batter on top.
  6. Bake in a water bath for about 60 minutes until set; cool completely before serving.
