Instructions

  1. Reduce the apple cider in a saucepan over medium heat until it's half its original volume (20-30 minutes). Let cool.
  2. Preheat the oven to 350°F and grease a 9×5 loaf pan.
  3. In a mixing bowl, cream together butter and brown sugar until light and fluffy.
  4. Mix in egg and vanilla until well combined.
  5. Combine dry ingredients (flour, apple pie spice, baking powder, baking soda, salt) in the bowl with reduced cider; stir until just combined.
  6. Pour batter into prepared loaf pan and bake for about 50 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a rack to cool completely.
