  • 1 tbsp milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract, lemon zest, and juice.
  4. Alternate adding the dry mixture with buttermilk until just combined.
  5. Pour the batter into the pan and bake for 50–60 minutes or until a toothpick comes out clean.
  6. Make syrup by whisking together lemon juice and powdered sugar while the cake bakes.
  7. Once baked, let it sit for 10 minutes before poking holes in it and brushing with syrup. Allow to cool before glazing.
