Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- Cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract, lemon zest, and juice.
- Alternate adding the dry mixture with buttermilk until just combined.
- Pour the batter into the pan and bake for 50–60 minutes or until a toothpick comes out clean.
- Make syrup by whisking together lemon juice and powdered sugar while the cake bakes.
