- 8–9 medium starchy potatoes
- 1 head garlic
- 1 cup heavy cream
- 1/4 cup whole milk
- 1 tablespoon unsalted butter
- 1/2 cup grated parmesan cheese
- 2 cups shredded Gruyère or mozzarella cheese
- Fresh thyme leaves
- Nutmeg
- Salt
- Pepper
Instructions
- Preheat oven to 375°F (190°C).
- Roast the garlic by wrapping it in foil with olive oil and seasoning. Bake for about 30 minutes until soft.
- Grease a 9×13-inch baking dish with butter.
- Thinly slice the potatoes using a mandoline slicer.
- Layer potato slices upright in the baking dish.
- In a saucepan, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat until blended but not boiling.
- Squeeze out roasted garlic cloves into a bowl and mash; stir into the creamy mixture.
- Pour the mixture over the layered potatoes and cover with foil.
- Bake for 40 minutes covered, then remove foil and top with remaining cheese; bake uncovered for an additional 30 minutes until bubbly.
