  • 4 tbsp unsalted butter, room temperature
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan.
  2. In one bowl, mix together flour, baking soda, spices, and salt.
  3. In another bowl, whisk together oil, sugars, eggs, pumpkin puree, and vanilla until smooth.
  4. Gradually combine the dry ingredients into the wet mixture until just combined; do not overmix.
  5. Pour the batter into the prepared pan and bake for approximately 55 minutes or until a toothpick comes out clean.
  6. While cooling, beat together cream cheese and butter for the frosting; gradually add powdered sugar and adjust consistency with milk as needed.
