- 4 boneless, skinless chicken breasts
- 1/2 cup honey
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes
- Salt and pepper, to taste
- 1 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions
- In a medium bowl, whisk together honey, olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper.
- Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Seal or cover and refrigerate for at least 30 minutes (up to 4 hours).
- Preheat oven to 400°F (200°C). Remove chicken from marinade and place in a baking dish.
- Spoon crumbled feta evenly over chicken.
- Bake for 25 to 30 minutes or until internal temperature reaches 165°F (75°C) and feta is golden.
- Let rest for 5 minutes before serving garnished with parsley.
