  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • 1 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions

  1. In a medium bowl, whisk together honey, olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Seal or cover and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat oven to 400°F (200°C). Remove chicken from marinade and place in a baking dish.
  4. Spoon crumbled feta evenly over chicken.
  5. Bake for 25 to 30 minutes or until internal temperature reaches 165°F (75°C) and feta is golden.
