  • 10 oz andouille sausage
  • 1 lb skinless chicken breasts
  • 1 lb raw shrimp
  • 1 cup chopped green peppers
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cups frozen chopped okra
  • 24 oz chicken broth
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 4 tablespoons all-purpose flour
  • 3 garlic cloves
  • 1 bay leaf
  • 1 teaspoon dried basil
  • 1 teaspoon oregano
  • 1 tablespoon Creole seasoning
  • 1/2 teaspoon thyme
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon cayenne pepper (Optional)
  • salt and pepper to taste

Instructions

  1. Brown the sliced sausage in a skillet over medium-high heat for 3-4 minutes.
  2. In the same skillet, create a roux by melting butter and olive oil, then whisking in flour until deep brown.
  3. Stir in vegetables (green peppers, celery, onion) into the roux and cook until softened.
  4. Add spices and minced garlic to the roux; mix well.
  5. Transfer everything to a slow cooker and add chicken broth and okra.
  6. Place chicken breasts and browned sausage into the slow cooker; cover with lid.
  7. Cook on High for 3-4 hours or Low for 7-8 hours.
  8. Shred cooked chicken before adding raw shrimp; cook until shrimp is bright pink.
  9. Serve warm in bowls.
