  • 2 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups romaine lettuce, chopped
  • 4 tablespoons Caesar dressing
  • 4 slices sourdough bread
  • 1 tablespoon butter
  • Salt and black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, combine panko breadcrumbs and Parmesan cheese.
  3. Season both sides of the chicken breasts with salt and pepper.
  4. Coat each chicken breast in the breadcrumb mixture until well-covered.
  5. Heat olive oil in a skillet over medium-high heat and brown each side of the chicken for about 3 minutes.
  6. Transfer to a baking sheet and bake for 15-20 minutes until cooked through.
  7. Butter one side of each slice of sourdough bread and grill until golden brown.
  8. Slice cooked chicken into strips.
  9. Toss romaine lettuce with Caesar dressing.
  10. Assemble the sandwich with dressed lettuce and sliced chicken between grilled sourdough slices.
