Ingredients
- 3 lb spaghetti squash
- ½ tsp olive oil
- 2 cups chopped fresh broccoli
- 2–3 cloves garlic
- ½ cup heavy cream
- 1 TBSP cream cheese (optional)
- ½ cup grated parmesan cheese
- ¼ cup grated cheddar cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Halve the spaghetti squash lengthwise and scoop out the seeds. Drizzle with olive oil, season with salt and pepper, then place cut-side down on a baking sheet.
- Roast for about 40 minutes until tender; check doneness with a fork.
- Meanwhile, steam or sauté broccoli with minced garlic until vibrant green (about 5-7 minutes).
- In a bowl, mix heavy cream, cream cheese (if using), garlic powder, parmesan, and cheddar.
- Once the squash is roasted, scrape out the strands, combine with the broccoli and cheesy mixture. Top with extra cheddar before serving.
